A FOOD TRADITION
Tuareg Cuisine
Tuareg cuisine reflects mobile and settled communities across northern Mali and the wider Sahara, including parts of Niger, Algeria, and Libya. It emphasizes durable foods and cooking methods suited to arid travel: millet, wheat, dates, milk, goat or sheep meat, tea, and occasionally wild or gathered plants. Bread is baked directly in heated sand or ashes, while meat may be roasted, boiled, dried, or preserved for later use. Examples include taguella, a flat bread cooked beneath hot sand and broken into sauce, takoula, a millet-based preparation, and meat stews or roasted goat served with grains. Sweet mint tea is also a significant hospitality practice, though recipes differ among confederations.
