A FOOD TRADITION

Tumbuka cuisine

Tumbuka cuisine is associated with northern Malawi and adjoining areas of Zambia, where maize, cassava, millet, beans, groundnuts, leafy vegetables and freshwater fish support flexible household cooking. Nsima remains an important staple, while pounding, boiling, drying and roasting are common ways to preserve or prepare food. Chikanda, a firm cake made from pounded wild tubers and other ingredients, is a notable shared foodway in the wider north-central region. Other examples include nsima with bean or vegetable relish and dried or roasted fish served with greens. The tradition reflects cross-border exchange and should be presented as overlapping with neighboring cuisines rather than territorially exclusive.
