A FOOD TRADITION
Tunisian Oasis Cuisine
Tunisian oasis cuisine encompasses the foodways of the Jerid, Nefzaoua, and other Saharan-edge oases, where date-palm agriculture, irrigated gardens, pastoralism, and caravan exchange shaped cooking. Staples include dates, wheat, barley, semolina, vegetables such as carrots and peppers, chickpeas, lamb, dried meat, and olive oil, with local fish or dairy where available. Characteristic methods include drying, preserving, steaming couscous, baking breads, and slow cooking meat and vegetables in substantial sauces. Examples include oasis-style couscous with dates or dried meat, bsissa prepared from roasted grains and legumes, and assida, a cooked flour preparation served sweet or savory. The tradition shares many elements with neighboring Saharan cuisines.
