A FOOD TRADITION

Turkish Cuisine of North Macedonia

Turkish communities and Ottoman urban heritage in North Macedonia preserve a cooking tradition visible in parts of Skopje, Bitola, Ohrid, and other historic towns. It combines Turkish culinary forms with Macedonian produce and local household practice. Pastry, rice, eggplant, peppers, legumes, minced meat, yogurt, and dairy desserts are prominent, with characteristic methods including baking in shallow trays, grilling over charcoal, stuffing vegetables, and slow braising. Representative foods include burek, kebapi, imam bayildi, and sutlijash, although each also belongs to wider Balkan or Ottoman culinary networks. The tradition is best understood as a local Turkish-Macedonian food culture rather than an isolated or exclusive national cuisine.
