A FOOD TRADITION
Ulster Cuisine
Ulster cuisine refers to the foodways of the historic northern province, shared across present-day Northern Ireland and the Republic of Ireland's northern counties. It combines potato-based cooking, oat and wheat baking, pork and bacon, dairy, apples, freshwater and Atlantic fish, shellfish, and preserved foods. Characteristic techniques include griddling breads, frying a substantial breakfast, stewing, curing, smoking, and using simple hearth or pan cooking. Recognizable examples include Ulster fry, potato bread, champ, and yellowman. These foods overlap with wider Irish and Scottish traditions, but the combination of potato breads, fried breakfast customs, dairy produce, and northern coastal ingredients gives Ulster cooking a useful regional identity.
