A FOOD TRADITION

Walloon cuisine

Walloon cuisine encompasses the French-speaking culinary traditions of southern Belgium, including the Meuse valley, Hainaut, Namur, Liège, and adjacent rural areas. It reflects forest, pasture, orchard, and river environments through ingredients such as potatoes, pork, beef, game, trout, apples, pears, beer, and regional cheeses. Cooking often emphasizes slow braising, hearty soups, pan-frying, baking, and the use of tangy or sweet-sour accompaniments. Familiar examples include boulets à la liégeoise, meatballs in a dark sweet-sour sauce; salade liégeoise, a warm potato and bacon preparation; and tarte al djote, a savory chard-and-cheese tart. It shares many forms with neighboring French and Ardennes cuisines.
