A FOOD TRADITION
Walser Cuisine
Walser cuisine reflects the highland foodways associated with Triesenberg and related Alemannic-speaking mountain communities in the Alpine region, while remaining part of a wider cross-border tradition rather than an exclusively Liechtenstein one. It relies on potatoes, grains, dairy products, cabbage, preserved meats, and seasonal mountain produce, with cooking shaped by farm self-sufficiency, baking, drying, and slow simmering. Characteristic examples include käsknöpfle, a soft egg-noodle dish with cheese and onions; rösti-like potato preparations; and alpine soups or stews enriched with milk, cheese, or cured meat. Festival baking and preserved fruit also form part of the tradition.
