A FOOD TRADITION
Wolof Cuisine
Wolof cuisine is a major Senegambian cooking tradition present in The Gambia as well as Senegal, especially in urban and riverine settings. Rice is central, accompanied by fish, meat, onions, tomatoes, tamarind, chilli, baobab leaves, and other vegetables; millet and dairy-based preparations are also important. Long simmering, seasoning pastes, frying, and cooking rice with a richly flavored sauce are characteristic techniques. Recognizable examples include ceebu jen, rice with fish and vegetables; ceebu yapp, rice with meat; and lakh, a millet porridge commonly served with a sweet or fermented dairy accompaniment. Regional and family variations are extensive.
