A FOOD TRADITION

Yao cuisine

Yao cuisine is found in eastern and southern Malawi as well as neighboring Mozambique and Tanzania, shaped by long-standing lake, river and inland trade connections. Cassava, maize, rice, beans, groundnuts, leafy vegetables and fish are central ingredients, with boiling, pounding, drying and stewing especially important. Kondowole, a dense cassava preparation, is associated with the wider Yao and southern Lake Malawi food sphere, while rice or nsima may be served with fish, bean or vegetable relishes. Dried usipa and other lake fish also appear in everyday cooking. These dishes and techniques are shared across communities and should not be assigned exclusive ethnic ownership.
