A FOOD TRADITION
Yezidi Cuisine
Yezidi cuisine in Armenia reflects the foodways of Yezidi communities whose traditions also extend across Iraq, Syria, Turkey and the wider Caucasus. It is grounded in wheat and bulgur, lamb and other meats, onions, herbs, legumes, dairy and seasonal vegetables, with strong variation by family, locality and religious observance. Techniques include boiling and simmering grains, shaping filled bulgur preparations, stuffing vegetables, baking flatbreads and preparing celebratory meat dishes. Examples associated with Yezidi cooking include kutilk, dolma and regional filled breads or pastries. Armenian Yezidi foodways overlap with surrounding Armenian, Kurdish and Mesopotamian traditions, so they should be described as a shared cultural cuisine rather than an isolated national one.
