A FOOD TRADITION
Zambezi Cuisine
Zambezi cuisine refers to food traditions in northeastern Namibia’s Zambezi Region, formerly known as Caprivi, and connects with neighboring Lozi, Subiya, Fwe, Mbukushu, and related communities across national borders. Maize, cassava, millet, beans, pumpkin, leafy vegetables, and river fish form a practical base, supplemented by game and seasonal wild foods. Characteristic methods include smoking and drying fish for storage, simmering relishes, cooking grains into porridge, and roasting or stewing meat. Examples include maize-meal porridge with fish relish, smoked bream or other river fish, and pumpkin-leaf stew with beans. The cuisine is riverine and floodplain-oriented rather than an arbitrary administrative subdivision.
