A FOOD TRADITION

Zarma-Songhai Cuisine

Zarma-Songhai cuisine is associated particularly with western Niger along the Niger River and in communities around Niamey, Dosso and Tillaberi, while forming part of a broader Songhai cultural region. Millet and sorghum remain important staples, joined by rice, cowpeas, okra, leafy vegetables, fish, milk and locally available meat. Cooking commonly combines pounded or steamed grains with vegetable, legume or meat sauces; riverine communities also use drying and simmering for fish. Dambou, a steamed grain-and-leaf preparation, tô with sauce, and fish or meat stews are useful examples. Hura and related grain or milk preparations illustrate the overlap between settled farming and pastoral foodways.
