A FOOD TRADITION

Zeelandic Cuisine

Zeelandic cuisine comes from the southwestern delta province, where estuarine waters, islands and maritime trade shape a food culture centered on seafood, shellfish and durable farm products. Mussels, oysters, eel, plaice, potatoes, dairy and locally grown wheat are common foundations. Shellfish may be steamed, fish smoked or fried, and vegetables and fruit are preserved through salting, pickling and baking. Recognizable examples include Zeeuwse mosselen, traditionally prepared mussels; Zeeuwse bolus, a dark, syrupy cinnamon pastry; and Zeeuwse babbelaars, hard butter toffees. The tradition overlaps with Flemish and wider Dutch coastal cooking, so its identity is regional rather than an exclusive claim to these foods.
