albóndigas de bacalao

Valencian salt-cod and potato fritters bound and coated with egg and flecked with parsley.

About albóndigas de bacalao

Albóndigas de bacalao, or mandonguilles d'abadejo, are traditional Valencian salt-cod and potato fritters associated with Lent. This profile follows a Vall d'Albaida recipe of cod, potato, egg and parsley rather than combining the many regional formulas found elsewhere in Spain.

Salt cod gives the fritters a concentrated savoury flavour, softened by mild potato. Parsley adds a fresh herbal note, while egg binds the mixture and forms a delicate golden exterior during frying.

The fritters are small, elongated ovals with lightly crisp, irregular golden surfaces. Inside they are pale, soft and cohesive, with fine flakes of cod and green parsley distributed through the potato mash.

Origins & food traditions

Cuina Valenciana publishes the complete Vall d'Albaida recipe selected here, extracted from Isabel Guerrero and Agueda Ureña's Menjar i Gaudir, and notes that cod versions remain prepared in that comarca. The Comunitat Valenciana tourism authority independently identifies cod-and-potato meatballs as a regional institution and confirms cod, potato, egg, parsley, oil and salt in the local preparation.
