Babà Napoletano
Also known as: Babà
Caffè Gambrinus’s selected babà napoletano enriches a yeasted dough in two egg stages before baking small cakes. An own citrus-and-rum soak and separate final rum syrup moisten the spongy crumb.

About Babà Napoletano

Stefano Avellano and Massimiliano Rosati’s selected babà napoletano follows the method of Naples’s Caffè Gambrinus. The small yeasted cakes develop a soft, spongy crumb that takes up two separately prepared rum syrups.
Manitoba flour, sugar and cold butter begin the first dough, followed by fresh yeast, three cold whole eggs and salt. After rising, the dough receives three additional eggs that were frozen beforehand and incorporated gradually.
The elastic dough is portioned into oiled moulds from a lightly oiled work surface. Each portion rises above its mould before baking, then cools and dries before soaking.
One own syrup mixes water and sugar before cooling and receiving rum. A separate, larger soaking syrup is scented with orange and lemon peels; these peels are removed before its rum is added.
The babà soak in the citrus-scented syrup, then are gently squeezed and drained. The first syrup is poured over each cake just before serving, giving the Neapolitan sweet its characteristic moist crumb and rum flavour.
