Bandhakopir dalna

PeekNCook’s Bandhakopir Dalna is the selected Bengali cabbage, potato and green-pea side dish. It cooks in a tomato-and-ginger masala and finishes with sugar, ghee and garam masala.

Supplied grated cabbage soaks in cold water, is strained through a large strainer and kept aside. Potato cubes are fried golden in a pan, then bay leaf and cumin seeds are added to the same oil.

Tomato and some salt are added and cooked covered until pulpy. A paste is made from the supplied ginger paste, turmeric, cumin powder and red chilli powder; this masala joins the tomatoes and is fried until oil separates.

Green peas, the fried potatoes and the same cabbage are mixed into the masala. The pan is covered for gentle cooking, then uncovered and heated more strongly so the water released from the cabbage evaporates.

Sugar, ghee and garam masala are added once the water has evaporated. The creator serves this side with the selected dal-and-rice pair.
