Brigadeiro

Hand-rolled cocoa and condensed-milk sweets coated with chocolate sprinkles.

About Brigadeiro

Brigadeiros are Brazilian party sweets, especially associated with birthdays. Olivia Mesquita presents this traditional rendition as the familiar hand-rolled confection, made from sweetened condensed milk, cocoa and butter.

The cooked mixture has a rich chocolate flavour, with salt seasoning the sweetness. It thickens in the pan and cools before being shaped, producing the soft, dense texture described by the author.

Small balls are rolled in chocolate sprinkles and placed in individual paper candy cups. Butter on the hands helps shape them, while the sprinkle coating gives each sweet its characteristic textured surface.
