About butterschnitzel

Renate-P’s Butterschnitzel at GuteKueche.at follows the publisher’s description of a dish of Viennese cuisine. Supplied ground veal mixes with a milk-soaked roll, egg, crème fraîche and generic herbs before breadcrumb coating and a pan-residue sauce.
The roll is cut into small cubes, milk is poured over it, and it stands for about ten minutes. In a bowl, the veal, whole egg, crème fraîche, supplied pressed roll cubes and herbs are mixed and seasoned with salt, generic pepper and nutmeg.
Wet hands shape the mixture into patties. Both sides turn in breadcrumbs. In a pan with a little generic oil, the patties fry on both sides, drain on kitchen paper and are held warm.
The residue in the same pan is topped up with the listed soup and brought briefly to the boil. The listed tablespoon of butter is stirred into that liquid.
The Butterschnitzel are plated with their own pan liquid. This selected optional accompaniment is separately prepared potato purée, as recommended by the publisher.
