Brinna Sands’s selected spice cake uses tomato juice with cinnamon, ground cloves and nutmeg. This version chooses light brown sugar and grated carrots from the recipe’s options, with Golden Wheat Flour forming the cake base.

The flour, brown sugar, table salt, baking soda and three ground spices are combined with vanilla, vegetable oil and tomato juice. Grated carrot supplies the selected addition to this spiced batter.

Following the baker’s modern method, all the ingredients are whisked in a mixing bowl. The batter is poured into a lightly greased round pan for baking.

The cake bakes until a toothpick inserted in its centre comes out clean. It is served directly from the pan, with an optional dusting of the selected icing sugar.

Tomato juice gives this cake depth and brings its spicing forward, while brown sugar and carrot complement the cinnamon, cloves and nutmeg. The in-pan presentation keeps this selected version straightforward to cut and serve.
