Canarian wrinkly potatoes
Canarian small potatoes simmered in heavily salted water and dried to a wrinkled salt crust.
About Canarian wrinkly potatoes
Papas Arrugadas are small skin-on potatoes cooked in heavily salted water, a familiar dish across the Canary Islands. This profile follows Felicity Cloake’s tested preparation of the potatoes themselves.
The potatoes have a concentrated, earthy flavour with a distinct but balanced salty edge. Cooking in brine gives the centres a dense, creamy character while keeping the ingredient profile exceptionally simple.
The potatoes remain whole, with dry, finely wrinkled skins dusted in white salt crystals. Inside they are tender and creamy rather than fluffy or waterlogged.
