About Carciofi fritti

Research draft based on the references below. These notes describe particular recipes and presentations; ingredient connections are still being reviewed.

GialloZafferano’s selected fried-artichoke version pairs crisp mammola heads with mint-flavoured Greek yogurt, strong Dijon mustard and matcha. The green tea powder gives the finished flower a green accent and an herbal note.

Chopped mint and a pinch of salt mix into Greek yogurt to make the first sauce. The yogurt sauce and mustard are placed in separate piping bags, keeping their flavours distinct.

The artichokes lose their tough outer leaves, stems, pointed tips and inner choke. Spreading the remaining leaves by hand leaves each cleaned head open like a flower.

Each head fries separately in seed oil until golden, then drains on absorbent paper and receives salt. Matcha powder is sifted over the plated artichoke.

Small portions of yogurt sauce and Dijon mustard complete the plate together. The creamy mint mixture and pungent mustard contrast with the crisp leaves in this selected dressed version of fried artichokes.
