Chalau
Afghan basmati rice parboiled and finished in a covered pot in the oven.

About Chalau
Jessica and Wasim Sultani share a mother's family recipe for Afghan white rice. Basmati rice, oil, water and salt form the simple foundation of their challow.
The rice is soaked, rinsed and briefly boiled before it is drained. An oil-and-salt-water mixture is stirred through the grains, which then finish cooking in the oven.
A covered pot holds the rice during its final stage. The finished grains are kept separate and fluffy, ready to be eaten on their own or alongside an Afghan meal.
