About chicken kebab

Research draft based on the references below. These notes describe particular recipes and presentations; ingredient connections are still being reviewed.

Chicken kebabs are pieces of chicken marinated and cooked on skewers. Swasthi Shreekanth’s selected home oven version uses boneless chicken, Greek yogurt and olive oil, with cubes of onion threaded between the chicken pieces.

The marinade combines the yogurt and oil with lemon juice, ready ginger-garlic paste, chilli powder, ready garam masala and salt. The author describes the result as moderately spicy, juicy and soft.

The chicken is drained of excess moisture, rubbed with the marinade and left covered in the refrigerator. The onion joins the chicken in the same mixture before the pieces are arranged alternately on the skewers.

The skewers grill in a tray, then are turned to cook the other side. Near the end they move to the top rack or broil setting; the author describes the onion charring at this stage. This presentation includes the offered optional butter brushing.

Shreekanth serves the cooked kebabs hot. This selected presentation uses ready mint raita alongside, while her other suggestions include chutneys and serving the kebabs as an appetizer or side dish.
