About chiratta puttu
Research draft based on the references below. These notes describe particular recipes and presentations; ingredient connections are still being reviewed.
Kerala Tourism presents chiratta puttu as a soft steamed rice preparation shaped by its coconut-shell vessel. This selection follows the puttu component of the published puttu-and-green-gram pairing.
Its method starts with soaked raw rice, powdered with small grains remaining. The rice mixture is briefly roasted without changing its color.
Salt and cumin seeds are mixed in. A little water is rubbed gently through the mixture before it is packed for steaming.
A hole is made in the coconut shell. Grated coconut lines the base, the rice mixture fills the shell, and more of the same grated coconut covers the top.
The filled shell is steamed and the finished puttu is explicitly served hot. The publisher’s green-gram preparation is a separate companion to this shell-shaped rice component.
