About Chivo Guisado

Clara Gonzalez shares her family's chivo guisado from Montecristi in the Dominican Republic's northwestern La Línea region. Bone-in goat, oregano and Scotch bonnet pepper give the stew its defining character.

The meat is coated with lime juice before an onion-and-garlic marinade. After browning, it simmers until tender, then cooks with plum tomatoes, Cubanelle peppers and tomato sauce. Red wine is optional.

Parsley finishes the stew. Casabe, the crisp cassava bread eaten with Dominican soups and stews, and avocado accompany the goat on the plate.
