About Coconut Choka

Alica’s coconut choka follows her family’s Guyanese weekend meal of roasted coconut with dhal and rice. Her named household version uses a coffee grinder to produce the fine texture associated with traditional stone grinding.

Fire roasting gives the coconut a smoky character. A portion of blended onion, garlic, wiri wiri pepper and thyme seasons it, with salt and optional fresh hot pepper.

The finished mixture has fine granules and enough moisture to hold its shape when pressed into a bowl. Separate dhal and rice complete the serving described by the author.
