About coffee cake

Sally McKenney’s sour-cream coffee cake places a cinnamon-brown-sugar crumb mixture both inside and above a soft cake. The selected version uses an eight-inch square pan and can finish with her optional vanilla icing.
Light brown sugar, flour and cinnamon are mixed with cold unsalted butter to make the crumbs. A separate cake batter creams softened unsalted butter with granulated sugar before eggs, vanilla and sour cream are added.
Flour, baking powder, baking soda and salt enter the cake batter, followed by a small amount of milk. About half of the batter is spread in the pan before one cup of the crumb mixture forms the middle layer.
The remaining batter covers that ribbon of crumbs, and the remaining crumb mixture is scattered on top. The baked cake cools briefly in the pan before any chosen icing is whisked and drizzled above it.
McKenney serves the cake warm or at room temperature. She explains the name as a cake enjoyed with coffee; its character comes from the cinnamon crumb layers and sour-cream batter.
