About cream of mushroom soup

Research draft based on the references below. These notes describe particular recipes and presentations; ingredient connections are still being reviewed.

Nagi Maehashi’s creamy mushroom soup blends the mushrooms into the broth so their earthy flavour runs throughout. Her selected combination uses white mushrooms for a paler colour and cremini mushrooms for a stronger mushroom taste.

Onion and garlic soften in unsalted butter without browning. The chopped mushrooms cook until soft, releasing liquid as they lose volume.

Vegetable or chicken stock, salt and black pepper are added and simmered gently. Cream or crème fraîche then gives the soup its rich finish, with the latter bringing a slight tang.

The soup is blended smooth and returned to the pot for a short simmer until the blending bubbles subside and the soup is hot. Maehashi’s croutons are small bread cubes coated in olive oil and salt, baked crisp and cooled.

The bowls can be finished with cream or extra virgin olive oil, croutons and a choice of parsley, chervil or thyme. Bread is served separately for dunking; the extra sautéed mushroom slices shown in the photographs are a separate presentation addition.
