Dal Tadka
Punjabi-style yellow lentils finished with aromatic ghee tempering.

About Dal Tadka
Dal tadka is lentil dal finished with a spiced tempering. Kunal Kapur’s Punjabi-style version combines masoor, moong and toor dal, with ghee selected from his ghee-or-oil option.
Ginger, garlic, cumin and chilli give it warming, savoury depth. Tomato and the lemon finish add a brighter edge to the rich ghee.
The lentils are soft and partly mashed, producing a thick, spoonable consistency. Coriander finishes the yellow dal, with the tempering supplying aromatic contrast.
