About Doro Wat

Jewish Food Society shares Elazar Tamano's doro wat as a staple of Ethiopian Shabbat tables. This rendition cooks chicken drumsticks and hard-boiled eggs in a rich sauce of red onion, tomato paste and berbere.

Garlic and fresh ginger deepen the aromatic sauce. Olive oil carries the slowly softened onions, while ground black cardamom supplies the final spice over the cooked chicken and eggs.

The eggs are slit before joining the pot so that the sauce coats them. The stew is served hot with injera, the tangy Ethiopian flatbread traditionally used alongside it.
