About Encebollado

Layla Pujol presents encebollado as a typical soup of Ecuador's coast. Her rendition cooks fresh tuna in a broth flavoured with onion, tomato, cumin, mild powdered aji and cilantro.

The strained fish broth then cooks the cassava. Once tender, the cassava is cut into smaller pieces and returned to the broth with flakes of tuna, bringing the fish and starchy root together.

Each hot bowl receives a generous topping of pickled onion-and-tomato curtido. Chifles, toasted corn and aji are offered alongside, adding crisp textures and a choice of heat.
