About Île Flottante

Research draft based on the references below. These notes describe particular recipes and presentations; ingredient connections are still being reviewed.

Chef Philippe’s selected île flottante uses a baked meringue dome coated in caramelized pistachio pieces. Vanilla custard surrounds the dome, while a meringue palm tree made for this version gives this version its island presentation.

Four egg whites and sugar form the dome in a lightly oiled mould. The baked meringue cools before unmoulding, then cools further for assembly.

A separate custard cooks milk with vanilla, egg yolks and sugar before straining and cooling. Half remains its natural colour, while blue colouring tints the other half for the plated sea effect.

Sugar caramelizes without added water before whole shelled pistachios are coated in it. The cooled pistachio caramel is broken and ground into pieces that cover the meringue dome.

A separate egg-white meringue makes the palm, with green fronds and cocoa-dusted trunks. The assembled palm and chocolate fish complete the plate, around the dome and two-colour custard.
