About Jeow Bong

Saeng Douangdara identifies Mae's jeow bong as the version he grew up eating. He distinguishes this very spicy, less sweet household style from the sweeter Luang Prabang version, while retaining the cow-skin texture associated with the Lao condiment.

Dried bird's-eye chillies, shallots, garlic, galangal and makrut lime leaves form the aromatic paste. Fish sauce, tamarind, sugar, salt and MSG supply its seasoning, with lemongrass used when simmering the cow skin.

Thin cow-skin strips are mixed through the pounded paste with a little of its drained chilli oil. Sticky rice and Lao jerky are the source's suggested accompaniments.
