About Jeow Som
Saeng Douangdara describes jeow som as a signature Lao dip and a staple of his mother's kitchen. His published wetter version combines fish sauce, lime, garlic, fresh bird's-eye chillies, sugar and coriander stems and leaves.
The garlic, chillies and coriander stems are pounded before the liquid seasonings and leaves join them. This keeps the source's sour, sweet and spicy flavour profile within a wetter sauce, distinct from the drier style the author recalls from childhood.
