Kaiserschnitzel
Alexander-M’s Kaiserschnitzel sears wheat-flour-dusted veal and returns it to a sauce made in the same pan with ready beef soup, whipping cream, chopped capers and the zest and juice of the same half lemon.
About Kaiserschnitzel
Research draft based on the references below. These notes describe particular recipes and presentations; ingredient connections are still being reviewed.
Alexander-M’s current Kaiserschnitzel recipe at GuteKueche.at pounds supplied veal schnitzels, coats them lightly in wheat flour and sears them in clarified butter. The same pan makes a caper-and-cream sauce with ready beef soup and the zest and juice from the same half lemon.
The supplied veal schnitzels are placed between cling film and gently pounded with a meat mallet to about five to seven millimetres. Salt and supplied ground black pepper season both sides, which are lightly dusted with wheat flour. Clarified butter is heated in a large pan, and the schnitzels sear for about two minutes per side over medium to fairly strong heat. They rest briefly covered on a supplied prewarmed plate.
The capers are finely chopped. The supplied half organic lemon is hot-washed, finely grated for about half a teaspoon of zest and squeezed for one tablespoon of juice. Ready clear beef soup deglazes the same pan, and a cooking spoon loosens the residue. Whipping cream and the chopped capers are added, and the sauce lightly reduces for about four minutes over medium heat.
The lemon zest and juice are stirred into the sauce. Supplied cold butter lightly binds it. The same schnitzels and their released juices return to the sauce and steep for about two minutes over low heat. Extra salt and generic pepper may be added if needed.
The Kaiserschnitzel is served immediately with its own pan sauce. Ready parsley potatoes are the selected optional accompaniment from the source’s suggested side choices.
