Kapenta
Crisp dried kapenta with tomato, onion and green pepper.
About Kapenta
Lubaya presents fried dried kapenta as a much-loved Zambian dish. This version selects the curry-powder seasoning the author recalls from childhood, alongside the recipe’s onion, tomato and green pepper.
Curry seasons the fish and vegetables, with chilli remaining optional. The tomato coats the kapenta rather than forming a long-simmered sauce, preserving the character of the fried preparation.
The small fish are crisp and golden before the vegetables join them. Nshima and prepared rape greens are the source’s suggested meal pairing, retained as optional accompaniments with their separate preparations unspecified.
