Kelupis

Leaf-wrapped glutinous rice cooked with coconut milk and served with peanut sauce.

About Kelupis

Kelupis are parcels of glutinous rice cooked with coconut milk and wrapped in leaves. RASA publishes Anne Nurhani’s Brunei rendition, using daun irik, also written ngirik, around the rice. A Sarawak home cook describes the same leaf-wrapped specialty from her home region.

Coconut milk gives the rice its rich flavour, with salt and a little cooking oil completing the rice mixture. The leaf wrapper contributes the characteristic aroma described in the Sarawak account.

The wrapped parcels finish by steaming. Their rice forms a cohesive filling inside the folded leaves; RASA suggests several accompaniments, represented here by peanut sauce.
