About Kerala Fish Molee
Research draft based on the references below. These notes describe particular recipes and presentations; ingredient connections are still being reviewed.
Suguna Vinodh presents this Kerala fish molly, or meen molee, as her coconut-milk fish stew. This selection follows her kingfish and canned coconut-milk choices.
Ginger and curry leaves are fried in coconut oil. Onion, garlic and green chili follow; the onions soften without browning before tomato and salt are cooked until oil appears on top.
Turmeric and chili powder are briefly fried into the mixture. Water is brought to a boil, then the fish is simmered without stirring so the pieces are not broken up.
The heat is reduced before the selected canned coconut milk and its separate dilution water are added. Lime juice and vinegar follow, and the same stew is simmered gently.
The author explicitly serves the finished fish molly hot. Her preferred basmati rice is selected alongside; appam and idiyappam remain separately offered alternatives.
