Lapis Legit

Also known as: Spekkoek

Indonesian butter-rich layer cake scented with cinnamon, ginger, cardamom, nutmeg and cloves.

About Lapis Legit

Lapis Legit is an Indonesian celebration cake built by grilling many thin layers of a rich spiced batter. This profile follows SBS's twelve-layer version and uses its documented homemade spekkoek blend of cinnamon, ginger, cardamom, nutmeg and cloves.

Butter, egg yolks and condensed milk give the cake an intense custard-like richness. Caramelised sugar and vanilla soften the warm, fragrant spice blend, while each grilled layer adds a lightly toasted note.

A cut piece shows numerous tight horizontal bands alternating golden and deep brown. The crumb is dense, moist and finely textured, with a smooth surface and clearly defined layers rather than an airy sponge structure.
