About Lavariya
Research draft based on the references below. These notes describe particular recipes and presentations; ingredient connections are still being reviewed.
Lavariya is described by DailyLife as a traditional food in Sri Lanka made from a rice-flour string-hopper wrapper and sweet coconut filling. This selected version uses the edges-together folded shape and the publisher’s sugar-based pani pol.
The filling begins with part of the sugar caramelised until dark brown. Hot water and the remaining sugar are added, then ground cardamom, salt and scraped coconut; cooking continues until excess water evaporates.
For the wrapper, ready rice flour is mixed with its separate pinch of salt and water until the dough is soft and does not stick to the palms. A large string hopper is made from this dough.
A portion of the same pani pol is placed in its centre. The wrapper is folded with the edges together and transferred gently onto the oiled lavariya mat, keeping the selected folded shape.
The filled wrappers are steamed until cooked and the flour no longer sticks when checked with a finger. DailyLife presents lavariya as a tea-time snack and also mentions breakfast and dinner.
