About leeks in cheese sauce

Jacqueline Bellefontaine presents leeks in cheese sauce as a side dish or light main. Her selected version uses Caerphilly cheese and a crisp breadcrumb topping.
The leeks are trimmed, washed and cut into short lengths, then steamed until just tender. They are drained and put into an ovenproof dish.
Part of the butter is melted with the flour and cooked briefly. Milk is stirred in off the heat, then the pan returns to low heat until the sauce thickens.
Most of the Caerphilly is crumbled into the sauce and stirred until melted. Salt, black pepper and a little nutmeg are added before the sauce is spooned over the leeks.
Breadcrumbs and the remaining cheese are scattered over the dish, and the remaining butter is dotted on top. The dish goes under a preheated grill until the topping is golden; Bellefontaine describes the finished topping as crisp and crunchy.
