About Lokum
Gönül’s Turkish lokum recipe uses the sugar-and-cornstarch confectionery base described in her account of the sweet’s development. This rendition selects the rose flavour she identifies among the classics, with citric acid in the syrup.
Rosewater perfumes the chewy confection, while red food colouring gives this particular recipe its colour. A mixture of cornstarch and powdered sugar coats the cut pieces.
The set slab is cut into small cubes and brought to room temperature for serving. Turkish coffee and water are the source’s suggested accompaniments; the separately described biscuit sandwich is a different serving option.
