Loso na Madesu

Congolese red-bean stew in an aromatic tomato base, accompanied by plain white rice.

About Loso na Madesu

Loso na Madesu brings together rice and seasoned beans in Congolese cooking. Hawa Hassan’s red-bean rendition has a tomato-rich sauce with yellow onion, green onion, garlic and bell pepper.

Sweet paprika and freshly grated nutmeg give the stew a warm aroma. The beans have a creamy texture, with their cooking liquid contributing body to the tomato sauce.

Plain white rice forms the other part of the meal, offering a mild contrast to the seasoned beans. Fried plantains are an optional accompaniment to this generous rice-and-bean plate.
