Masa

Fermented rice cakes with onion and ginger, served warm.

About Masa

Lola Osinkolu identifies masa, also called waina, as a traditional Northern Nigerian food associated especially with Hausa communities. Her rice batter combines soaked and cooked rice with onion, ginger and yeast.

Fermentation gives the cakes their slightly tangy character. Sugar and salt season the batter, baking powder is added before cooking, and yogurt remains an optional ingredient in this attributed version.

The batter cooks in shallow round moulds, creating small golden cakes with soft, spongy interiors. The source serves them warm; peanut-based suya pepper sauce is the selected optional accompaniment from its savoury serving suggestions.
