About Mee Goreng Mamak

Research draft based on the references below. These notes describe particular recipes and presentations; ingredient connections are still being reviewed.

Sha’s Singapore-style mee goreng mamak has glossy noodles in a sweet, tangy chilli sauce. Her one-pan version brings the red chilli paste, eggs, selected chicken and bean sprouts together in the same wok.

Softened dried red chillies are blended with shallots, garlic and water. Sweet dark soy sauce, ketchup, chilli sauce and salt are mixed separately, with MSG and red colouring offered as optional additions.

The chilli paste fries gently in oil until it darkens, thickens and the oil separates. For the selected chicken version, chicken cooks before the eggs are scrambled in the wok.

Yellow noodles and bean sprouts join the pan with the mixed sauce. A high-heat toss coats the noodles evenly, with a little extra water added only if needed to help them move through the wok.

The noodles are served hot straight from the wok with a lime or calamansi wedge. Sha also offers a cucumber relish: sliced cucumber and optional onion are tossed in ketchup and chilled as a sweet-tangy accompaniment.
