Milcao

Chiloé potato bread cakes combining mashed cooked potato with squeezed raw grated potato and lard.

About Milcao

Milcao is a traditional potato bread cake from Chile's Chiloé Archipelago. This profile follows Típico Chileno's plain baked version, without treating the fried and curanto-cooked forms as the same recipe.

Potato supplies a mild earthy flavour, enriched by savoury pork lard and salt. Combining cooked mash with squeezed raw potato gives the dough more character than an ordinary mashed-potato cake.

The cakes are compact, round and bread-like, with a lightly firm baked surface and a dense, tender centre. Fine strands of grated potato remain integrated through the paler mash.
