Millet couscous
Also known as: Couscous de mil
Steamed millet granules with optional baobab leaf powder and oil.
About Millet couscous
IRD’s field recipe records millet couscous observed in eight households in Dori, Burkina Faso. Fine millet flour is moistened and formed into small granules, then steamed in repeated stages.
The granules are broken apart between steaming stages to develop the soft texture described in the French account. Baobab leaf powder is the selected optional leaf ingredient; oil and salt are also documented additions.
The freshly cooked couscous is served with a groundnut-based sauce. This is the savoury household preparation recorded in the research, distinct from the separately described milk serving and dried-couscous preparations.
