About Mochar ghonto

Bong Eats’ mochar ghonto is a Bengali banana-blossom curry flavored with ginger, cumin, ghee and gorom moshla. This selection uses the offered whole Bengal gram and lentil-fritter additions.

The outer bracts are removed and the florets cleaned of their tough inner parts. Both florets and the inner core are chopped, pressure-cooked with salt, turmeric and water, then strained, cooled and mashed for the source’s mix of mushy and crunchy texture.

Mustard oil is tempered with whole spices before diced potatoes fry golden. Grated coconut follows, then a ginger-and-ground-spice slurry, salt, sugar and slit green chillies.

The soaked Bengal gram cooks with the seasonings before the same prepared blossom is stirred in and cooked covered. More of the same slit chillies follow, then the selected lentil fritters; the offered milk can loosen an overly dry mixture.

Ghee and gorom moshla finish the curry. The source serves it hot with rice and dal; its separate prawn version is another offered preparation.
