Maumita Paul’s Moong Phulkopir Ghonto pairs cauliflower with roasted yellow moong dal. She recalls her grandmother’s preparation while planning a Bengali meal for visiting friends.
The dal is dry-roasted until golden, washed and drained, then boiled with water and a little salt until al dente and drained again. The supplied cauliflower florets are rubbed with turmeric and salt.
Part of the oil fries the cauliflower until slightly tender and lightly golden. It is drained from the oil onto a kitchen towel, while a separate bowl holds the remaining turmeric and salt dissolved in warm water.
The remaining oil in the same kadai sautés supplied grated ginger and slit green chillies before the turmeric-and-salt paste is mixed in. The same fried cauliflower returns with sugar, followed by the boiled dal; water splashes are used if the mixture becomes too dry.
Seasoning is adjusted and ghee added at the finish. The source serves the ghonto hot, keeping the cauliflower and dal cooked through while preserving their texture.
