About mushroom sauce
Research draft based on the references below. These notes describe particular recipes and presentations; ingredient connections are still being reviewed.
Nagi Maehashi presents a creamy mushroom sauce as a separate preparation for several dishes. This selection uses the white button mushrooms shown in her photos, dry white wine, chicken broth and heavy cream.
Olive oil and unsalted butter are heated together before sliced mushrooms cook until golden. Minced garlic and a pinch of salt and pepper are added near the end of browning.
Dry white wine is added while the pan is stirred and scraped, until the wine is mostly evaporated. Chicken broth, heavy cream and finely grated Parmesan are then stirred in.
The same mixture simmers with occasional stirring until it thickens. Fresh thyme leaves are stirred through, salt and pepper are adjusted to taste, and the pan is removed from the stove.
The author attributes added savory depth to wine and Parmesan. Crusty bread is the selected optional dip accompaniment; the meat, pasta, omelette and potato suggestions remain separate uses of the sauce.
